Step 1:

  • Wash the chicken with cold water, then dry thoroughly using paper towels.

  • Remove excess fat or skin, if necessary.

Step 2:

  • Choose a pot that will accommodate the chicken, but not over fill it.

  • Put the chicken into the pot and make sure that it is covered completely by water or chicken broth.

Step 3: 

  • Sprinkle in salt and pepper.

  • If you would like even more, add chopped onions, garlic cloves, bay leaves, or herbs to your dish.

  • Place the pot on the medium high heat and let the water simmer.

  • You should also scoop, or ladle off any foam as it floats on the surface of the broth.

  • Once boiling, reduce the heat to low and cover the pot.
